02 - Steam or boil carrots until very soft, approximately 15 to 20 minutes. Drain and let cool slightly.

07 - Pipe or layer carrot purée and avocado cream in artistic strokes or dots along the top edge of the beet stripe.
08 - Decorate the stripe with microgreens, edible flowers, crushed pistachios, and a light sprinkle of flaky sea salt.
09 - Present immediately, inviting guests to scoop directly from the striped board.

# Expert Insights:

01 -
  • It looks restaurant-quality but comes together in under two hours, which means you can actually impress people without losing your mind.
  • The flavors are gentle and earthy, letting each vegetable shine without competing for attention.
  • It's naturally vegetarian and gluten-free, so you're not boxing yourself into a dietary corner.
02 -
  • Overblending is your enemy—stop the moment the purées are smooth, or they'll become gluey and lose their bright color.
  • Room temperature matters; serve the purées at cool room temperature rather than cold, so the flavors actually register on your tongue.
  • The avocado cream will oxidize if it sits, so make it last and plate immediately, or squeeze lemon juice over it if you need to wait.
03 -
  • Make your purées ahead of time and refrigerate them separately; they keep beautifully for two days and actually taste better once the flavors settle.
  • If your avocado cream breaks or looks grainy, you rushed it—start fresh with a new avocado and mash by hand instead of with a food processor.
